Halwa Recipe; Suji ka halwa | Semolina halwa with Dry nuts Recipe

Semolina Halwa is semolina pudding sweetened with syrup and mixed with dry nuts. This Halwa goes really well with purees.

Semolina Halwa.

Ingredients:

Oil 3 tbsp
Sugar 1/2 cup
Semolina 1 cup
Almonds 20 pcs
Water 1 1/2 cup
Pistachio 20 pcs
Desi-ghee 1/2 cup
Kewra Water 2 tbsp
Green cardamom 3 pcs
Yellow food color 2 pinch

Recipe:

In a cooking pan, roast semolina on low heat, keep stirring till each semolina seed turns from yellow to a light golden brown.
Switch off the flame and pour desi ghee, sugar, water & mix it.
Mix food color in kewra water and add it in halva and cook on medium flame.
As the water dries, gravy forms, add oil in it.
Add almonds n pistachio crushed in it, cook for 2-3 mins more & Halwa dish is ready.

Veg Recipes | Potato Chickpea Curry | Aloo Chana Bhaji.

Aloo chana bhaji is a tomato puree based vegan curry, great to have in breakfast with Naan or with Puri & with rice in dinner.
Its takes about an hour to cook but very easy and healthy dish.

Ingredients:

Salt
Tomato 2
Potato 2
Oil 3/4 cup
Green chili 4
Red chili 1 tsp
Water 1 1/2 glass
Chickpeas 1 bowl
Cumin seed 1 tsp
Turmeric powder 1/2 tsp
Ginger garlic paste 2 tbsp
Fennel flower(kalonji) 1 tsp

Recipe:

Heat oil in a cooking pan & cook ginger garlic paste n fennel seeds for few minutes.
Add tomatoes, green chilies in oil till tomato gravy forms.
Put all spices, chickpeas & boiled potatoes with water & stir well.
Cook for 10-15 mins till you get aloo chana gravy.

Restaurant style Chicken Nihari Recipe.

Nihari is a fiery spicy chicken stew. Nihari was prepared all night for royals in early ages. Its a traditional dish of Muslims of Indian subcontinent & a national dish of Pakistan. Nihari is famous for its fiery taste & texture.

Ingredients:-

For Nehari:
Yogurt 1 cup
Oil 3/4 cup
Maida 3 tbsp
Chicken 1 kg’
Cardamom 2 pieces
Ginger garlic paste 2 tbsp
Salt
Red chili powder 1 tsp
For Nehari Masala:
Coriander seeds 1tsp
Fennel seeds 1tsp
Roasted chickpeas 3tbsp
Garam masala 2 tbsp

For Garnish:
Chopped green chili
Sliced ginger
Lemon
Chopped coriander leaves

Recipe:

In a grinder, grind chickpeas, coriander seeds, fennel seeds & garam masala.
In a bowl, stir yogurt & maida well & set aside.
Heat oil with cardamom n ginger-garlic pastes in a pan.
As ginger-garlic turns like light yellow add chicken and red chili and cook it well.
Add yogurt mixture in chicken and stir it.
When chicken is cooked, the oil comes out, take this oil out in other bowl and set aside.
Pour 1/5 ltr water, salt, nihari masala & mix it.
Cover the lid and cook it for few minutes.
Garnish it with green chilies, coriander leaves and add the oil which was taken out in a bowl.
Serve with lemon and pinch of Chaat Masala.

Bakery Style Croissant Dough Recipe.

To make croissants great you need to learn the art of making its dough great at first place. Making right croissant dough is hard but if you paid attention to every detail, you may end up making great croissant dough.

Dough Recipe.

Ingredients:
Water 1 cup
Dry milk powder 1/3 cup
Butter 1/2 cup
Plain flour 3 cups
Yeast 1 tbsp
Baking powder 1 tbsp
Salt as per taste
Sugar 1 tbsp
Butter 250 g Plain square.

Recipe:-
Knead plain flour, dry milk powder, baking powder, yeast, sugar, salt n butter with water in a bowl for 3-5 mins.
Cover the dough with cling film & place in Airtight chamber for the dough to swell for 1 hr approx.
Take out the dough and roll out the dough into a large rectangle
Now fold it back & roll it & then fold it back again & pack it in cling film to stay for overnight in the fridge.
Next day, we will take the croissant dough & roll out the dough into a large rectangle
enclose the butter layer inside the dough & roll it.
Now cover the dough for 10 – 15 mins in cling film and your croissant dough is ready.

Homemade Masala Bhindi ki Sabzi Recipe (Okra) | Spicy Ladyfinger Recipe.

Lightly spicy & semi-dried ladyfinger is an Indian Punjabi vegan food. Masala Okra is made with okra,tomatoes & onions.

Okra Recipe.

Ingredients:

Salt
Onion 3
Tomato 3
Oil 1 cup
Lemon 1/2 pcs
Green chili 6-7
Garam-masala 1 pinch
Red chili powder 1 tsp
Turmeric powder 1/2 tsp
Coriander powder 1/2 tsp
Ladyfinger (Okra/Bhindi) 1/2 kg

Recipe:

Heat oil in a pan, fry ladyfinger n lemon for 5-7 mins , fry till no sliminess is left.
Add tomatoes,onions,red chili powder & cook on a low flame with covered lid for 15 minutes.
Finally add green chilies and garam-masala and steam cook, cover the lid (dum) for 5 mins, then serve.

Bakery Style Mini Croissants Recipe.

A croissant is a buttery, flaky, crescent-shaped roll made of layered yeast-leavened dough, it was originated in Austria. Although croissants are puffy, they’re dissimilar from puff pastry. These flaky n buttery Croissants will melt your heart with its taste.

Ingredients:

Croissants dough as required
White cheese 1 cup
Shredded carrots 2 medium size
Egg white of 1 egg
Ginger and garlic paste 1/4 tsp

Croissants Recipe:

Mix white cheese, carrots, black pepper in a bowl.
Roll out dough into a large rectangle. (Important Note: Keep the dough in the fridge for 15 mins before rolling)
Using Cutter slice triangles all over your dough.
Roll these triangle slices a little & egg wash before putting the mixture in it and tightly roll up into a crescent shape, make sure to keep tip underneath.
Brush your croissants with egg wash.
Once the oven is heated, bake your croissants for 30 mins at 180°C (or 360°F).
Crispy, healthy, delicious croissants are ready to eat after they are cool down for 15 mins on a cool rack.

Dough Recipe.

Homemade Kari Pakora Recipe

Kadhai Pakora is a thick gravy based on garam flour & deep fried vegetable pakora with Dahi in it, famous as Punjabi dish or Desi Food. Its eaten with Boiled rice or Roti (Bread).

Kari Pakora

Ingredients:-
For Kadhi:

Yogurt 1/2 kg
Gram flour 1 1/2 cup
Onion paste 1
ginger and garlic paste 1 tbsp
Red chili powder 1 1/2 tbsp
Salt as per taste
Coriander powder 1 tsp
Garam masala 1/2 tsp
Turmeric powder 1 tsp
Lemon 1 pcs
water 2 kg

For Pakoray/Pakoda:

Potatoes 2
Onion 1 large
Gram flour 2 cup
Fresh coriander leaves 1/2 cup
Green chili 6-7 pcs
Red chili powder 1 tsp
Crushed coriander seeds 1 tsp
Garam-Masala 1/2 tsp
Salt as per taste
Turmeric powder 1/2 tsp
Ginger and garlic paste 1 tsp

For Tarka:

Oil 1 cup
Tomato paste 2 tbsp
Cumin seeds 1 tsp
Onion 1
Carom (Ajwain) 1 pinch

Recipe:-

For Kadhai:
Mix Yogurt, Gram flour, Onion paste, ginger garlic paste, Red chili powder, Salt, Coriander powder, Garam-masala, Turmeric powder & lemon in a big bowl.
Now cook the mixture in a cooking pot with 2 kg water for about 2-2.5 hrs on a low flame.
Kadhai mixture should be half of its quantity.

For Pakoray / Pakoda:
Mix potatoes, onions, gram flour, coriander leaves, green chilies, red chili powder, crushed coriander seeds, garam masala, salt, turmeric powder, ginger garlic paste in a bowl.
Add up a small amount of water to mix well to form the batter.
Heat oil in a wok or pan, with hands drop the pakora batter slowly in the oil & deep fry on medium flame till pakora turns golden brown.
Take fried pakora from oil and put them in kadhai to cook for 5 mins.

For Tarka:
Heat oil in a fry-pan, add onion,cumin seeds & Carom , saute it.
Add tomato paste and stir it.
Add half of tarka in pakora khadi mixture, cook it for few minutes more.
Serve Kadhai Pakora with remaining tarka over it.

Homemade Fried Chicken Recipe.

Homemade fried chicken is chicken pieces floured or battered and then deep-fried in oil or ghee, breading gives a crispy crust all around chicken pieces making it flaky, crispy & loved by all ages and made for all occasions.

Fried Chicken

Ingredients:-

Chicken 1 kg (Cut into pieces with skin)
Milk 1/2 liter
Hot sauce 1/2 cup
Garlic 5 cloves
Salt 1 tsp
Red chili powder 1 tsp
Turmeric powder 1/2 tsp
Coriander powder 1 tsp
Garam-masala powder 1 tsp
Black pepper 1/2 tsp
White pepper 1/2 tsp
Plain flour 1 1/2 cup
Oil (For deep fry )
Egg 2
Baking powder 1 tsp

Recipe:-

Mix milk with hot sauce and garlic cloves in a bowl & dip chicken in it & set aside for 3 hrs.
After 3 hrs, take out the chicken and marinate with salt, red chili powder, Turmeric powder, coriander powder, garam-masala, black pepper & white pepper for 30 minutes more.
Toss chicken pieces in flour, then in beaten egg & then again in flour. Bread each piece deeply.
Fry chicken pieces in deep fryer on medium flame.
Delicious Fried Chicken is ready.
