For Syrup:

Recipe:
For Syrup: In a pan, add sugar, water, lemon juice & cardamom to cook till it boils. For Basbousa cake: Knead butter, semolina, coconut, dry milk, yogurt, baking powder & vanilla powder with eggs for 5 minutes. Put the dough in the baking pan & press it with a spoon & garnish it with almonds as you like. Bake Basbousa in the oven for 25 minutes at 180°C (350°F). Pour syrup all over Basbousa and bake for other 10 minutes. Cool down Basbousa and serve as you like.
Ras malai is a dessert originating from the Bengal region but lot famous in Indian Sub-continent. These are white cream balls soaked in simmering milk cream.
Mix dry milk powder, semolina, baking powder, plain flour & Desi-ghee in a bowl. Knead it for 5-10 mins with help of an egg by gently adding a small amount of it makes dough soft. Divide & make small round balls from the dough without any crack. Heat milk, sugar n cardamom in a cooking pan & cook till milk decreases from 1.5 liters to 1 L Add Balls in milk to cook on high flame for 5 mins. Add half of pistachio n almonds to simmer for 10 mins. Cool down the ras-malai in the pan for 15 mins and refrigerate. Serve by garnishing almonds n pistachios all over it.

Recipe:
Make the marinade by stirring together lemon, salt, red chili powder n crushed red chili.
Prick holes in chicken pieces or apply long deep cut on chicken.

For Sponge:
Eggs 3
Castor sugar 250 g
Cocoa powder 3 tbsp
Fresh milk 125 ml
All-purpose flour 375 g
Baking powder 1 tbsp
Vanilla powder 1 Tsp
Vegetable oil 125 ml
For Frosting Cream:
Cocoa powder 1 tbsp
Whipping cream 2 packets
Fresh chill milk 250 ml
For Chocolate Sauce:
Water 250 ml
Sugar 5 Tbsp
Cocoa powder 3 Tbsp
Fresh milk 1 cup
Milk chocolate 150 g
All-purpose flour 2 tbsp
Recipe: For Sponge: Preheat the oven for 30 mins at 200°C (392°F). Beat eggs & castor sugar in a bowl till it turns into white foam like shape. Then add oil, vanilla powder & fresh milk in it; Beat it again. Strain All-Purpose Flour & Baking powder in the bowl and mix it with a spatula. Take a Baking tray & grease it with butter and pour the mixture in it and bake it at 170°C( 340°F) for about 25 minutes. For Frosting Cream: Put cocoa powder, whipping cream & chilled fresh milk into a bowl and beat it well till a chocolate cream is formed. Place it in the freezer. For the Chocolate sauce: Add milk in a pan, add sugar cocoa powder, all-purpose flour and mix it and cook it on a low flame Add 1 cup water and cook it for 5 minutes after the chocolate sauce thickens add chocolate. now let it cool down. After the chocolate cake sponge is ready. Moist it with 1 1/2 cup milk .add frosting all over the cake.and then spread sauce on it You can also add chocolate chips to enhance the taste. Place it in the freezer for half an hour and then place it in the fridge for 3 hrs. Your marvelous Chocolate cake is ready, you can even decorate it more with any chocolate syrup as you like.
Muffins are sweat miniature cakes, flat circular spongy roll cake made with eggs, plain flour & baking powder. Muffins are great to serve at lunch or tea party. You can eat them as a snack or treat with fruits or cream, as you like.

Plain flour 1/2 cup
Castor sugar 1/2 cup
Butter 1/2 cup
Baking powder 1/2 tsp

Recipe:
Preheat oven to 350°F (180°C)
Mix the flour n baking powder in a bowl.
Add butter n castor sugar with beaten egg to make a batter
Spoon into the muffin pans, filling each cup about two-thirds full.
Bake your muffins in oven at 180 for about 30 mins approx.
Check the Muffins with a toothpick/skewer inserted in the center should come out clean without crumbs on it, the muffins are ready.
Gulab Jamuns are round balls made of plain flour and soaked in sugar syrup.

These are very delicious sweat balls famous in sub-continent.
Ingredients:-
For Jamun Balls:
Dry milk 1 cup
Semolina 2 tbsp
Plain flour 1 tbsp
Baking powder 1 tbsp
Oil 1 1/2 tbsp
Egg 2
For Sugar Syrup:
Sugar 1 1/2 cup
Water 3 cup
Cardamom 3 pcs
Recipe:- Add sugar in water with cardamon in a cooking pot on low flame, after few minutes Sugar syrup will be ready. Knead dry milk, semolina,plain flour, baking powder, oil with eggs beaten & little oil or you can use a food process Make round balls from dough through your hand palm. Fry these balls in oil on medium flame, till color changes to a light golden brown. Now take out the Jamuns (balls) from oil and cook in sugar syrup on high flame for 5 mins with covered lid. Switch off the flame and let the Jamuns stay at rest in syrup for 30 minutes before serving. Gulab jamuns are ready to serve in a bowl with sugar syrup.
Dahi Baray is also one of the famous street snacks. Dahi vada is Dumplings made from lentils and served with spices and yogurt, making it a great appetizing snack.

Golden lentil (mung dal) 1 cup
Gram flour 3 tbsp
Yogurt 1 kg
Baking powder 1 tbsp
Salt
Cumin seeds 1/2 tsp
Crushed red chili 1 tbsp
Fresh mint leaves
Green chili 1
Recipe:
In a blender, blend yellow lentil, plain flour, baking powder, red chili & salt with some water, then take it out in another bowl.
Pour the Baray paste by hand or by big spoon to fry in hot oil to form a round shape like Baray.
Dip Baray in water to swell for 2-3 mins, then drain water by squeezing Baray one by one through hands palms.
Put Baray in a big bowl and pour yogurt with cumin seeds and coriander all over it.
You can enjoy your Dahi Baray now.
Golgappa is a very common sour n spicy street snack. It consists of a round hollow fried crispy puri, filled with Special Tamarind Sauce & few Vegetables.

For GolGapa Dough:
Semolina 2 cups
Plain flour 3 tbsp
Salt 1/2 Tsp
Lukewarm water 1 cup 250 ml
For GolGapa Filling Ingredients:
Boiled potatoes 2
Green chili 1
Fresh mint leaves 1/2 cup
Tomato 1
Chat Masala 1 tsp Special Tamarind Sauce(Khati chutney):
Tamarind pulp 1 cup
Fresh coriander leaves 1/2 cup
Fresh mint leaves 1/cup
Green chilies 2
Salt 1 tbsp
Crushed red chill 1 tbsp
Cumin seeds 1 tbsp
Lemon 1
Water 1 glass
Recipe:-
For GolGapa Dough:
Knead Semolina, plain flour, salt in lukewarm water till firm dough is formed, set aside covered with transparent foil & let it rest for 10 mins.
For GolGapa Filling:
Mix potatoes, tomatoes, coriander leaves, chili & chaat masala in another bowl.
For Tamarind Sauce(Khati chutney):
Put tamarind pulp, coriander leaves, mint leaves 1/cup, green chilies, salt, red chill, cumin seeds, lemon with 1 glass of water in a grinder and mix. Your Chutney is ready.
For Golgapa:
Roll the Dough of gol gappa and cut circles with any spherical utensil.
Fry these Puri circle dough in a wok (Remember: Oil should be hot), Pour oil over puri with a spoon to make it puff like a ball.
Take Puri out of oil and place on absorbent paper to dry extra oil.
To serve, fill gol gappas with vegetable mixture & chutney.
Ginger Chicken Handi is a tomato paste based curry spiced with Green n Red chilies & Ginger n Garlic. A very simple chicken dish to prepare within few minutes.

Ingredients:
Oil 1/2 cup
-Chicken:
Chicken 1 kg
Veggies:
Tomatoes 4
Ginger and garlic paste 1 tbsp
Ginger fingers slices
Green chili x4
Sauces:
Soy-sauce 2 tbsp
Vinegar 2 tbsp
Spices:
Salt
Sugar 1/2 Tsp
Crushed red chili 1 Tsp
Turmeric powder 1/2 tsp
Roasted cumin seeds 1 tbsp
Recipe:
Marinate the chicken with Vinegar, sugar n Soya Sauce set aside for 30 mins approx. before frying.
Now fry it in a Kadhai(Kadhai), till chicken turns white.
In a cooking pan, add tomatoes with ginger garlic paste along with salt, turmeric powder & red chili.
Now put the chicken into the cooking pan and roast it for 5-7 mins approximately.
Adding cumin seeds, ginger slices, black pepper & green chilies to cook on low heat with covered lid for 10 mins approx.
Garnish with Coriander leaves & dish is ready to serve.ginger

Recipe:
Place pan on heat with oil.
Fry potatoes n Cumin Seeds for approx. 5-10 mins.
Add Tomatoes with spices & cover the lid to cook on a low flame for 10-15 mins approx.
Finally, garnish it with Chilies & Coriander Leaves.
